Feta And Sun Dried Tomato Muffins


Hayley and I adore Feta cheese.  Ian and Jeremy aren't fond of it at all - it's far too salty for them.  Good - all the more for Hayley and me to eat. 
The saltiness of the Feta and the slight chewiness of the sun dried tomatoes combine like magic.


Ingredients:
100 gm (4 ounces) semi sun dried tomatoes
200 gm (8 ounces) feta cheese, diced small
2 spring onions, finely chopped
1 rounded tablespoon baking powder
1 cup white plain flour
2 cups wholemeal plain flour
1 cup cold vegetable stock
1/2 milk
1/4 cup olive oil
1 egg
Paprika

Method:
Pre heat oven to 180 degrees Celsius.

Sieve flours and baking powder into a large bowl.  Add tomatoes and spring onions.  Beat stock, milk oil and egg in a separate bowl.  Add wet ingredients to dry ingredients and beat on low speed with electric mixer.  When just combined gently stir in the feta using a metal spoon.  Sprinkle lightly with paprika.

Cook in greased muffin tins at 180 degrees Celsius (350 degrees Fahrenheit) for 20 - 25 minutes till golden and firm.

My muffin tins are quite large and this mixture makes me 16 muffins.

Notes:
These muffins are quite hearty and are delicious served for lunch with a lovely home made soup.
