Terrific Turkey Lasagna


I made this turkey lasagna during the holidays and it was such a hit, my mother even took the recipe. I would highly suggest giving this turkey lasagna recipe a try. This is definitely a beginner’s recipe, it was easy enough for me to pick up but tasted amazing, and looked extremely difficult to make. You’ll be sure to impress any guests when you bring this turkey lasagna to the dinner table.

Ingredients

Vegetable baking spray
1/2 pound fresh ground raw turkey breast
3/4 cup onions chopped
1/2 cup green peppers chopped
1 teaspoon garlic minced
1 (14 1/2-ounce) canned whole tomatoes, un-drained and finely chopped
1 (6-ounce) canned tomato paste
1/2 cup water
1/4 cup fresh basil chopped
1 tablespoon plus 1 teaspoon fresh chopped oregano
1 clove garlic, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup ricotta cheese, can be light if preferred
1/4 cup frozen egg substitute, thawed
4 cooked whole wheat lasagna noodles (unsalted)
1 cup (4 ounces) shredded part-skim mozzarella cheese, divided
2 tablespoons fresh Parmesan cheese, grated and divided

Preparation

To begin this turkey lasagna first coat a large nonstick skillet with baking spray, and place on the stove, turn to medium heat until it becomes hot. Next, add the ground turkey, green peppers, garlic, and onions. Cook all ingredients until the turkey has become browned, it is ready when the turkey starts to crumble. Take the turkey out of the skillet and drain, you can also pat it dry with a paper towel if you prefer, then put the drained turkey back into the skillet. Once you are done, you can begin adding the tomatoes and the rest of the ingredients. Bring everything to a boil, and bring down the heat to medium, continue cooking uncovered for roughly twenty minutes or until everything becomes thick. Pay attention and stir intermittently, when it is done take off the heat and set aside.

At this point in a separate bowl you can mix the ricotta cheese with the eggs, and ensure that you stir thoroughly.

Now, all your ingredients are ready to begin building the lasagna. Spray your baking dish; the dish should be roughly (7- x 5 1/4- x 1 1/2-in.) Next, you need to cut all of the noodles in half crosswise and place then lengthwise as a single layer along the bottom of your baking dish. Add in ¼ of your turkey mix and then ¼ of the ricotta cheese that you mixed with the egg substitute. Sprinkle ¼ of the mozzarella and parmesan cheeses together and continue layering in this order until your dish is full. When you are done you can place into the oven and bake uncovered between 30 to 35 minutes at 325 degrees, it is ready when everything is heated. After taking it out let everything sit at least ten minutes before you serve.
