Gluten Free Apple Cake Recipe


This gluten free apple cake was a huge it when I made it. Even my picky kids could not get enough of it.

It was made with organic apples, raw sugar, nuts, gluten free oats, and coconut oil but regular items can also be substituted.

This gluten free coffee cake is moist and not overly sweet. The streusel topping adds a nice touch.

What is streusel?

Steusel is a crumbly topping - or filling - made with fat, flour or oats - sugar and some spices.

Gluten Free Apple Streusel: Ingredients
2 1/4 cups gluten free baking mix #2
1 1/4 cups raw sugar - or regular sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups milk
3 eggs
2 tablespoons coconut oil - or any vegetable oil
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 medium apples - diced - I leave the skin on

Streusel Topping
3/4 cup gluten free olf-fashioned oats
3/4 cup brown sugar
1/3 cup chopped pecans or walnuts
1/2 teaspoon ground cinnamon
1/2 cup melted butter


Gluten Free Coffee Cake: Method
Preheat your oven to 350 degree and grease a 9x13 dish.

If you are using raw sugar: place your sugar and the milk in a bowl and let stand for a few minutes. Proceeds with the following.

In a large bowl, place all your cake ingredients - minus the apples - and mix until well combined. Add the apples and let sit for 10 minutes.

Pour into your prepared dish.

To make the streusel topping, mix all the ingredients in a bowl and place on top of the coffee cake batter.

Bake for 35 to 40 minutes or until a toothpick inserted in the middle comes out clean.

Makes about 20 servings.
