GRANNY’S DOUGHNUTS

Ingredients
1 cup sugar
1 tsp nutmeg
1 tsp baking soda
1/2 tsp salt
2 eggs
1 tablespoon shortening
1 cup sour milk
6 cups flour

Preparation
Mix sugar, nutmeg, soda, salt, eggs, milk, and shortening. Add enough flour to roll out dough on a floured surface and cut with doughnut cutter. Heat shortening to 375 degrees F. and drop doughnuts in, turning several times. Drain on soft crumpled paper. Cool and dust with powdered sugar, or granulated sugar and or with cinnamon, or drizzle with glaze (see below) if desired. Repeat with doughnut centers.
Note: milk can be soured by adding 1 Tbsp vinegar to 1 cup fresh milk.
White Doughnut Glaze
2 cups powdered sugar
1 tsp vanilla extract
4 to 6 Tbsp milk
Mix powdered sugar, vanilla, and milk with a fork t
o desired consistency. Thicken with powdered sugar or thin down with milk.

Basic Doughnut Recipe – baking powder doughnut

Ingredients:
- 8 cups oil for deep frying
- 1 large egg
- 1/2 cup sugar or artificial sweetener
- 1/2 cup milk or water
- 2 tablespoons shortening, melted
- 2 cups all purpose flour, sifted
- 2 teaspoons baking powder
- Pinch of cinnamon
- Pinch of nutmeg
- Pinch of salt
- Coatings, optional; powdered sugar or cinnamon and powdered sugar

Directions
1. In an electric fryer heat the oil to 375 degrees.
2. In a bowl, beat together egg and sugar until light in color.
3. Stir in the milk/water and the shortening.
4. Add the dry ingredients into the wet mixture and stir till combined.
5. Chill the dough for about 25-30 minutes.
6. On a floured surface, flatten the dough to about 1/2 inch thickness using a rolling-pin.
7. Cut out the doughnuts using a doughnut/biscuit cutter, a knife or two different sizes of cookie cutters.
8. Allow to dry for 10 minutes.
9. Using a slotted spoon, carefully transfer the doughnuts to the hot oil.
10. Cook 2 at a time, flipping when brown on a side. Drain on towels or paper bag.
11. Dust with sugar or sugar mixture.
12. Serve warm.

Notes:
Doughnut holes: Roll dough into balls and add to hot oil;fry until golden brown.
Variations:
- Chocolate: Combine the melted shortening with 1 ounce of melted milk or dark chocolate before adding to batter.
- Glazed: Combine 1/2 cup confectioner’s sugar with 2 teaspoons warm water and 1/2 teaspoon vanilla. Spread
over cooled doughnuts. Add sprinkles if desired too.
- Filled: Stir 1/2 cup filling of choice until smooth. Transfer to a pastry or plastic bag and snip off one corner. Poke
doughnut with a knife and squirt in. Filling ideas could be pie filling, pudding, custard and jellies.

Healthier Baked Doughnuts

- cooking spray
- 2 cup all-purpose flour
- 1/2 cup sugar or artificial sweetener
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 cup low-fat buttermilk (1%)
- 2 large eggs
- 1/4 cup honey or agave nectar
- 2 tablespoons butter, melted
- 1 tablespoon vanilla extract

Directions:
1. Preheat oven to 425°. Lightly coat a doughnut pan with cooking spray, or spray a cookie sheet.
2. Combine flours and remaining dry ingredients in a large bowl, whisk till combined.
3. Combine buttermilk, eggs, honey, butter, and vanilla, stirring well till combined.
4. Add buttermilk mixture to flour mixture; mix just until combined, don’t over stir.
4. Spoon batter into doughnut pans, filling two-thirds full.
5. Bake in middle of oven until golden brown on bottom (about 8 minutes).
6. Let cool in pan slightly for about 4 minutes and then turn out.
7. Coat with toppings or glazes of choice – refer to previous recipe for ideas.
